B
Know
spaniards
is
about
tapas
and
sangria
and
which
is
an
amazing
product.
It's
something
really
simple,
that
we
have
many
many
guests
here
in
the
restaurant
that
they
they
just
come
for
the
sangria
and
it's
a
really
simple
thing,
but
I
think
it's
sweet,
it's
fruity
and
it's
fresh
and
who
doesn't
like
for.
B
Someone
who'd
never
been
to
haleo.
There
was
always
things
that
I
love
to
recommend
and
they
definitely
need
to
taste.
The
croquetas,
which
is
a
traditional
recipe
made
from
the
scratch,
is
amazing.
They
have
to
taste
the
dives
another
beautiful
dish
which
is
in
dives,
goat,
cheese,
almonds
and
garlic
dressing.
They
have
to
taste
the
tortilla
de
patatas,
which
is
the
most
significant
chap,
but
the
gamba
salahill,
which
is
our
most
salt
tapa
and
the
spinach
salad
catalana
this
one,
which
is
amazing.
It's
like
so
simple,
but
it's
so
test
peanuts.
B
B
Means
a
lot
of
things,
but
kaleo
means
means.
Noise
means
party
means
means
a
lot
of
things
happening
together
when
you're
in
your
home
and
your
neighbors
they're,
making
a
big
party
and
they're
having
a
big
dinner,
and
there
is
a
lot
of
noise.
You
always
would
say
in
spanish,
which
means
such
a
helio,
the
neighbor,
the
neighbors
are
making.
So
haleo
means
noise
party,
all
this
kind
of
funny
stuff
everything.
B
B
B
That
is
a
fresh
tomato.
Actually,
it's
a
really
nice
way
to
pair
panco
tomate,
which
is
really
important
thing
in
spain,
and
then
we
have
the
jamoni
verico
de
vega,
which
is
an
amazing
amazing
hub.
It's
a
free
range
pork
that
it's
been
fed
only
with
acorn,
so
it's
the
only
pork
that
creates
an
omega-3
fat
inside
the
system
completely
melts
on
your
mouth.
The
fat
is
completely
healthy.
A
B
Very
easy,
excellent
glad
you
like
it
yeah.
I
can
show
you
some
of
the
salad
that
we
made
here
in
helio.
We
make
the
red
beet
salad,
amazing,
salad,
so
refreshing,
really
good.
The
apple
and
manchego
and
walnut
salad,
with
some
fennel
really
refreshing
as
well
old
sundays
in
haleo,
endless
salad,
endless
paella
for
eighteen
dollars
for.
A
B
On
so
here
now,
are
we
cooking
gamba
calajillo?
It's
a
really
famous
tape
in
spain
and
it's
only
garlic
and
some
marble,
chile,
some
shrimp,
some
lemon
juice,
some
brandy
and
that's
gamba
salahillo.
You
would
order
this
campala
and
we
would
we
would
make
it
for
you
right
away
so
we'll
make
everything
from
the
scratch
we'll
make
every
tapa
for
our
guests.
A
B
C
Job,
my
name
is
jill
simorski,
I'm
the
beverage
director
for
think
food
groups,
which
is
the
company
that
owns
and
operates
paleo
and
six
other
restaurants
in
the
area.
The
theme
tonight
is
a
grape,
it's
monastrell
and
I
think
it's
really
important
to
demonstrate
just
how
well
wines
go
with
different
types
of
food.
These
are
bacon,
wrapped
dates
so
and
they
are
delicious
and
warm
and
sweet
and
salty,
and
they
have
a
crispy
fried
breading
on
the
outside.
C
But
I
thought
this
would
be
a
fun
contrast,
because
this
wine
has
such
sweet
sort
of
juicy
fruit
and
the
dates
are
sweet
as
well,
but
there's
also
a
salty
contingent.
The
croquetta
is
also
going
to
have
the
uberico
ham,
so
it's
going
to
have
the
salty
salty
pork,
the
salty
ham,
it's
also
fried
so
it's
a
nice
balance
of
sort
of
that
juicy
fruit
and
the
kind
of
crispy,
salty,
fried
character.
C
A
Of
this
one,
what
would
you
say
for
us
to
eat
with
it
at
home?
I.
C
C
Food
cheese
is
something
that
most
folks
think
goes
just
perfectly
well
with
wine.
Obviously,
what
I
have
here
is
a
blue
cheese.
You
have
to
be
really
careful,
because
there
are
some
things
that
just
don't
work
well
together
and
when
you
have
a
blue
cheese,
it
has
a
really
distinctive
flavor.
It
is
salty
and
tangy,
and
if
you
pair
it
with
a
wine,
that's
sort
of
acidic
and
tannic,
it
ends
up
tasting
sort
of
metallic
and
bitter.
D
A
Small
bites
with
big
flavors
bring
some
friends
try
a
little
bit
of
everything,
pass
share
and
prepare
to
eat
a
lot
for
a
complete
menu
wine
list
directions
and
to
learn
more
about
the
