Drive down Wilson Boulevard in Clarendon and youll see there is no shortage of great restaurants. Today, were at this historic building which is home to the Liberty Tavern. This split level restaurant features modern American cuisine upstairs, and a comfortable and diverse bar downstairs. As soon as you enter The Liberty Tavern, youll smell the amazing aroma from two wood-burning ovens, and quickly notice the handcrafted preparation of breads, pastas, sausages, ice creams, desserts and so much more

there's

great
restaurants.
This
historic
building
is
home
to
the
liberty
tavern,
where
you
can
enjoy
modern
American
cuisine
upstairs
in
the
dining
room
or
downstairs
at
the
bar.
The
restaurant
has
two
wood-burning
ovens
in
its
kitchen
and
it
doesn't
take
long
to
smell
or
see
the
handcrafted,
homemade
entrees.

Wanted
reluctant
tavern,
because
it
reflects
the
fact
that
the
restaurant
has
a
bustling
bar
environment
as
well
as
a
refined,
dining
environment
and
my
family
owned
and
operated
a
hotel
called
the
liberty
hotel
in
northeastern
Pennsylvania
for
about
40
years.
So
we
took
the
liberty,
hotel
and
tied
that
to
the
name
tavern,
and
we
just
thought
it
had
a
really
nice
ring.
Why.

Liked
Clarendon
as
a
neighborhood,
because
obviously
the
demographics
are
great.
It's
a
really
vibrant
neighborhood.
We
like
Arlington
alive
both
Brian,
my
business
partner
and
I,
are
residents
as
our
number
of
people
on
our
team,
but
it's
nice
that
a
lot
of
people
can
take
the
metro,
be
safe
and
not
have
to
worry
about
the
hassle
of
parking
either
far.

Wanted
to
be
the
kind
of
place
that
you
could
go
for
a
quick
drink
with
your
friends
or
the
kind
of
place
where
you
can
take
an
important
date
or
important
client
to
dine
or
to
come
for
brunch
with
a
large
family
gathering.
We
wanted
to
have
a
lot
of
different
options:
I've
always
loved
restaurants
that
can
be
flexible
in
that
regard.

that
it's
really
an
honor,
because
I
love
to
dine
out
when
I'm,
not
in
this
restaurant
I'm
in
other
restaurants
and
I,
think
there's
a
lot
of
really
really
good
restaurants
of
Washington
more
than
ever
before,
it's
an
honor
to
be
a
part
of
it
was
particularly
important
to
be
acknowledged
only
seven
months
after
we
opened.
That
was
a
real
mark
of
credibility
that
was
on
something
we
were
really
proud
of.

We're
going
to
do
some
beautiful,
spinach
rock
off
the
bus
with
a
white
bean
salad,
some
baby
mixed
heirloom
carrots,
a
little
bit
of
chive
vinaigrette
and
freshman.
We
have
few
it's
just
a
really
nice
spinach
rocked
octopus.
This
comes
in
every
day.
We
get
about
50
pounds
of
octopus
in
each
that
we
braise
it
for
about
two
hours
and
some
white
wine
lemon,
and
we
also
had
a
couple
little
quartz
in
there
has.

It'll
get
some
nice
bitter
flavor
to
go
with
the
sweetness
of
the
need
once
it
starts
to
get
a
little
bit
of
a
little
tender
tool,
just
kind
of
leave,
it
kind
of
set
it
and
forget
it
as
they
normally
say,
and
then
we
can
make
up
the
salad
white
beans
has
got
some
beautiful,
cannellini
beans,
user,
watermelon,
radishes,
I'm
very
pretty
and
we'll
just
do
a
little
jewelry
in
on
the
watermelon
radish
red,
pearl,
onions
and
fresh
chives.
And
then
we
have
some
nice
fresh
mint.

then
this
is
yesterday's
sauce
over
here,
which
will
have
a
little
bit
more
flavor
you'll,
see
the
actual
color
difference,
and
then
we
just
kind
of
put
a
little
bit
of
pasta
water
in
there
we
just
kind
of
slowly
stew,
pork
blood
until
it
gets
nice
and
tender.
These
are
the
little
me
okie
little
pillows,
I
love
you
great
they're,
perfect
for
the
spoon.
Let
them
cook.
It
really
start
to
kind
of
float
on
top,
throw
in.
