pizzeria
that
uses
a
special
ingredient
to
perfect

began
the.

started
a
long
long
time
ago,
when
I
was
really
really
young,
even
before
even
moved
in
this
country.
I
grew
up
in
nice
in
the
South
of
France,

literally,

the
Italian
border,
and
you

two
or
three
restaurants
in
these
are
pizzerias
or
Italian
restaurants,
for
that
matter,
I
always
thought
that
you
know
if
I

was
young
one
of
the
pizzerias
that
I
worked
at
I
met
a
gentleman
and
josep
otago
Leo
was
the
the
master
pizzaiolo,
basically
in
a
restaurant,
and
you
know
he
really
is
the
guy
that
really
made
me
discover
the
love
of
pizza
and
and
what
what
pizza
was
all
about,
and
he
taught
me
how
to
make
it.
When
I
open
this
place,
I
decided
to
dedicate
you
know
the
name
to
to
to
his
legacy
the.

Been
great,
it's
been
above
expectations
in
terms
of
things,
I've
turned
out
in
terms
of
how
people
have
enjoyed
coming
to
this
place,
and
you
know
we
really
set
out
to
to
have
a
neighborhood
restaurant
and
is
in
this
wonderful,
crystal
city
area,
and
it
turned
out
to
be
just
that
the
neighbors,
the
people
that
have
supported
us
from
day
one.
They
continue
to
say
to
us
that
you
know
the
love,
the
food,
they
love
the
atmosphere,
they
love
the
service
we
emphasize
on
the
entire
experience.

you
eat,
but
you

how
it's
brought

About
20
years
ago,
somebody
took
me
to
a
place
in
New
Haven
Connecticut
that
still
exists,
called
Frank,
Pepe's
tomato
pie,
hole
pizzeria
to
call
it
tomato
pie
and
that's
the
first
time
I
ever
heard,
or
even
seen,
a
coal-fired
oven.
The
pie
that
came
out
of
that
oven
was
unbelievable.
I
was
totally
blown
away
by
it.
There
was
a
particularly
about
this
particular
pie.
The
way
was
charred
the
nuttiness
of
the
taste,
though
the
crispy
dough
on
the
outside,
and
the
airy
and
dewy
inside
I
mean
that
everything
was
perfect.

just
melts
on
top

the
pizza
and
it
spreads
out

and
an
anchovy
on

the

it'll
burn
very
good,
and
the
anchovy
which
I
don't
eat
usually
makes
a
nice
flavor
in
on
it.
This
is
