we're
a
music
venue
and
a
fried
chicken
restaurant
here
at
the
end
of
West
Howard
Avenue,

Avenue
Biloxi
and
we've
only
been
open
for
four
months.
We've
been
having
a
lot
of
success
with
the
music
venue,
Tuesday
nights,
we
have
acoustic
open
acoustic
jam.
Wednesday
night
is
open
mic
night
when
all
musicians
can
come
in
and
play
and
we
usually
get
a
lot
of
chemistry
with
different
musicians.
Different
bands.

Several
bands
have
been
formed
right
out
here
on
the
sidewalk
and
we've
only
been
open
for
months,
but
you'll
see
if
you
come
down
here,
you'll
see
what
I'm
talking
about
and
and
while
you're
here
you
might
want
to
enjoy
some
of
the
best
chicken
around
and
the
best
tail
on
shrimp
around.
We
have
a
meal
that
I'm
going
to
show
you
in
a
little
while
it's
called
the
combo
basket
and
it's
chicken
and
shrimp,
and
some
of
your
favorite
sides
along
to
go
along
with
it.

have
two
full-size
pool
tables
and
pool
is
always
free
here
at
the
Rock
and
chicken.
So
come
on
down
shoot
some
pool,
maybe
have
a
couple
Beverages
and
enjoy
the
rock
show,
while
you're
enjoying

rocking
chicken
as
a

a
musician.
One
thing
I
wanted
to
do
was,
in
this
part
of
town,
set
up
a
stage
where
we
can
have
rock
and
roll.
You
know
we
have
the
blues
club.
We
have
Giuseppe
jazz
clubs
and
other
clubs
around,
but
we
didn't
have
a
place
where
people
could
come
and
just
rock.

what
we
have
here
is
an
open
mic
and
we
have
drums
that
anybody
can
play.
We
have
a
back
line
of
guitar
amps
that
anybody
can
plug
into
and
guitar
amps,
including
bass
that
people
can
come
out.
We
also
have
people
with
horns,
saxophone,
trombone
and
everything,
but
the
tuba
so
far
and
keyboards,
and
anybody
if
you
have
an
instrument,
bring
it
on
out
plug
it
in
and
just
jam
with
jam
with
us
and
jam
with
the
rest
of
the
people,
I
like
to
get
up
there.

Sometimes
myself
and
jam
with
people
who
come
out
some
of
my
best
customers
are
right.
Local

this
area,
we
have
the
fire
department,
the
police
department.

have

from
the

stores.
People
from
local
restaurants
and
neighborhood
people

walking
distance
is
mostly
what
we're
getting

that's
what
we
ended
up
doing.
We
have
a
place
here
where
you
can
play
free

listen

rock
music

eat
some
of
the
best
food
that
you've
had
in
a
while,
all

here's
where
the
magic
happens
y'all.

how
Mama
showed
me
how
to
do
it.
We're
going
to
be
cooking
a
combo
basket
for
you
today,
which
includes
chicken
tenders
and
shrimp.
The
chicken
tenders
are
jumbo
chicken
tenders,
the
shrimp
or
deveined
tail
on
2125
shrimp.
So
the
premium
shrimp-
and
we
have
premium
chicken
here
and
what
we're
going
to
do
is
we're
going
to
cook
it
in
the
order
of
how
long
it
takes
to
cook
mom
always
said:
whatever
takes
the
longest
cook.
First,
you
drop
that
first.

the
first
thing
we're
going
to
be
dropping
here
is
going
to
be
our
chicken
tenders.
So
what
we
do
is
we
hand
batter
each
piece
drop.
Our
Tenders
in
this
battle
right

consists
of
wheat
flour
and
spices,

salt,
white,
pepper,
a
little
bit
of
tiny
bit
of
chili
powder
and
a
tiny
bit
of
chili
pepper
and
some
powdered
onion.

going
to
drop
those
and
set
the
timer,
the
timer,
seven
minutes.
We
have
a
thermostat
right
here
to
show
the
temperature
of
the
oil
is
at
325
degrees.
So
that's
good
to
go
so
once
now
that
we've
got
those
started,
we
want
to
move
on
to
the
the
thing
that's
going
to
take
the
next
longest
to
cook,
which
is
going
to
be
our
prize.
So
what
we're
going
to
do
is
about
two
and
a
half
about
a
cup
and
a
half
of
french
fries.
These
are

three
and

minutes
these
hush
puppies
are
green,
onion,
Hush
Puppies.
You
know
they
have
them
with
jalapeno
and
with
corn
and
other
stuff,
but
I

chose
to
go
with
the
green
onion
Hush
Puppies
we're
going
to
drop
those
and
we're
going
to
set
the
timer
on
those
for
three
minutes.

we
have
all
these
things
going
now.
So
the
only
other
thing
we
have
besides
our
shrimp,
which
is
the
last
thing
I
cook,
is
we
have
sliced
jalapenos,
they're,
fresh
they're,
sliced
and
they're
soaked
in
water
and
if
you'll
notice,
all
my
shrimp,
my
chicken
and
my
jalapenos
are
soaked
in
water.
First,
you
want
them
to
be
wet
right
before
you
dredge
them,
and
so
what
I
do
is
I
go
ahead
and
put
the
jalapenos
in
the
chicken
dredge.
This
is
my
chicken
breading.

got
my
hands
washed
up
and
we're
ready
to
start
putting
this
together
as
soon
as
our
timers
start
to
go
up
we'll
start
to
Plate
this
thing.
So
what
I
do
is
I
take
my
plate.
There's
my
first
timer
and
I
got
deli
paper.
We
put
down
I,
see
my
number
threes
going
off.
That
means
my
French
fries
are
ready,
so
I
put
them
up
there
and
let
them
drain
for
a
second.

Sometimes
I'll
bump
it
a
couple
times
like
this,
try
to
knock
a
little
bit
of
the
grease
off
to
speed
up
the
process
of
draining
it.
You
know
we
cook
almost
everything
here
to
order.
You
know
we
usually
don't
pile
up
a
bunch
of
chicken.
We
have
bone-in
chicken
and
what
we
do
is
we
wait.

get
this
is
the

smaller

We
also
have
a
combo

which
has
more
shrimp
and
more
chicken
on

has

or

the

and
