patrick's

and

the
mood

home
right

what
we're
going
to
be
preparing
today
and
I'm
hungry
already,
and
we
haven't
even
cooked
anything
braised
corn,
beef
brisket.

Now,
when
most
folks
prepare
for
st
patrick's
day
meal,
they
take
a
big
pot
and
throw
in
some
corned
beef,
potatoes,
cabbage
and
water,
and
then
just
boil
the
heck
out
of
it
until
dinner
time
now,
I
hope
not
to
offend
our
irish
ancestors,
but
that
makes
for
a
pretty
dull
meal.
Instead,
we're
going
to
braise
our
corned
beef
separately
from
our
potatoes
and
cabbage,
concentrating
all
that
corned
beef
deliciousness
into
a
dish.
That'll
have
everybody
claiming
to
be
irish.

On
st
patrick's
day,
the
best
tasting
corned
beef
comes
from
the
oldest
corned
beef
company
in
america.
Grobels
they've
been
making
it
here
in
america
since
1883,
so
they
know
what
they're
doing
the
only
place
we
have
been
able
to
find
it
here
on
the
coast
is
walmart.
That's
a
secret
between
the
two
of
us.
That's
where
you
get
your
corned
beef.
Now
corned
beef
brisket
comes
in
two
cuts,
the
flat
and
the
point.

We
always
use
the
flat
cut.
We
will
be
preparing
two
briskets,
so
we'll
have
some.
For
the
next
day
for
our
ever
popular
reuben
sandwiches,
the
second
best
meal
you
can
have
using
corned
beef.
Now
we
start
by
opening
the
package
and
placing
the
corned
beef
brisket
in
a
roasting,
pan
fat
side
up
that's
important
inside
the
package.
You
will
find
a
packet
of
seasoning
sprinkle
contents
of
seasoning
on
the
top
of
the
beef.

We
will
be
using
beer
for
our
braising
liquid.
Don't
worry
the
alcohol
cooks
off
so
it's
totally
safe
for
the
kiddies
pour
the
beer
into
the
pan
until
just
below
the
top
of
the
beef
seal.
The
pan
tightly
with
aluminum
foil
place
in
a
325
degree
oven.
Now
this
is
an
all-day
project,
but
you'll
agree.
It's
well
worth
the
time.
Well,
the
total
cook
time
is
about
six
hours,
but
the
end
of
the
two
hour
and
four
hour
period.

If
you
would
like
to
brown
the
meat,
when
you
are
ready
to
serve
simple,
you
will
place
the
corned
beef
brisket
on
a
cutting
board
slice
it
into
one
quarter,
inch
thick
slices,
that's
a
good
size
slice
very
good
for
eating,
be
loved
by
everyone,
and
also
during
your
last
three
hours
of
cook
time
for
the
beef.
That's
when
you're
going
to
prepare
your
potatoes
and
cabbage.

So
everything
is
planned
out
for
the
six
hour
get-together
of
a
delicious
saint
patty's
dairy
meal.
Let's
start
with
cabbage
cabbage
is
pretty
easy.
Folks
start
by
peeling
off
and
discarding
the
outer
leaves.
This
is
a
rustic
irish
meal.
So
we'll
like
to
cut
the
cabbage
into
fairly
large
pieces,
now
cut
the
cabbage
head
in
half
top
to
bottom.
That's
top
to
bottom
place,
each
half
on
a
cutting
board
and
cut
lengthwise
into
one
inch
strips
cutting
those
strips
in
half.

Add
a
tablespoon
of
vinegar,
a
teaspoon
of
ground
cloves
and
a
tablespoon
of
salt
simmer
the
cabbage
until
tender,
adding
the
beef
braising
liquid
for
seasoning
mouth
watering.
Definitely
that's
your
cabbage!
Now,
let's
get
to
the
potatoes
one
of
my
favorites,
you
can
go
the
traditional
route
folks,
who
are
peeling
and
boiling
and
mashing
your
potatoes
or
maybe
using
instant
potatoes
following
the
instructions
on
the
box.
Well,
we're
gonna
go
old
school
here,
boiling
our
spuds
old
school's.

Always
best
first
take
five
pounds
of
potatoes,
cut
them
into
large
cubes
and
boil
them
in
salted
water
until
done
now.
You'll
know
when
they're
done
is,
when
you
stick
the
fork
in
them
and
they
either
break
or
slide
off
the
pork
now
add
cream
cheese
and
sour
cream
and
whip
the
potatoes,
adding
milk
until
creamy
then
add
the
dirty,
onions
and
hormel
bacon
pieces
mix
well
and
add,
salt
and
pepper
to
taste.

That's
good,
put
the
potatoes
in
a
baking
dish
top
with
mozzarella,
cheese
and
bake
for
45
minutes
at
325
degrees
time
your
potatoes.
Now
this
is
important,
so
they
will
be
finished
when
you
are
ready
to
serve
the
beef
and
the
cabbage.
