couldn't

what
was
in

boxes

knew

it

like
they
just
came,

this
guy
chad
would
help
me
he

great
at
selling,

he
just

found

He
wasn't
good
at
like

rules

lot

didn't
like
to
be
honest
with

other
issues
is
the
requirement
that
the
artist
be
in
the
booth
instead
of
having,

you

them

whoever
you

the
booth

someone

we

chance

meet,

that
that
also
was
an
issue.

fit

that's

we
have

balloons

makes
balloons

kids

entertainment

there

some
challenges
with
logistics
here,

time
to
do
this,
the
space
to
do
it,
how
you
would
manage
and
marshal
these
kids
as
as
they're
doing

meet
people

produce

fruit

amazing

round

something
we
don't

get
in

and
cauliflower.

family
based
business.
It's
a
food
business
that
we
started
about
five
years
ago.
2016.
we
initially
started
it
at
the
tamale
festival
in
2016..
It
was
supposed
to
be
only
a
one-time
thing.
My

parents
have
been
cooking.
This
recipe
that
actually
exploded
right
in
the
middle
of
the
pandemic,
called
viria
became
very
popular
in
san,
diego
and
all
over
the
states.
You
know
the
major
cities.

Funny
thing
is

dad
has
been
cooking
this
for
the
last
30
years,
since
I
can
remember,
since
we
were
kids,
so
we
we
started
at
the
tamale
festival
in
2016
and
that's
what
pretty
much
took
off,
as
you

somewhat
of
a
business
that
from
that
one
year
we
actually
got
accepted
at
college
of
the
desert.

there
for
going
on
three
seasons
before
the
pandemic
hit
in
between
right

pandemic.

we

cod,

actually
got
scouted
by
other
festivals
and
events
such
as
cabazon
outlets.
We
were
doing
taco
festivals,
we
do
private,
caterings
country
clubs
and
every
sorts
of
events
right
before
the
pandemic.

actually
applied
for
village
fest
in
fall
of
2019,
so
I
did
go
be
before
the
board
members.

still

I
did
my
presentation
with
mybirya
and
what
is
our
signature
dish,
which
is
this?
We
call
it
the
inside
out
tamale,
it's
an
open-faced
tamale,
and
so
it's
quite
unique.
It's

anybody
remember
where
we
instead
of
cooking
the
ingredients
traditionally,
where
we
stuffed
the
meat
and
wrapped
at
the
mall,
we
decided
to
create
a
concept
where
we
cook
the
masa
by
itself.

we

started
with
this
with

tamale
concept,
and
so
I
presented
this
before
the

and
I

get
accepted,

we
started
with
a

food
business

food
project,

were
doing
pop-up

had
a

I'm
very
excited

february
of
this
year
we
actually
acquired
a
brand
new
food
truck
an
18-foot
brand
new
food
truck
that
we

decided
to
to
go
with
instead
of

pop-up
tent
system,
and
so
we're
doing
that
we
are
now
an
official,
fully
operated,
fully
permitted
food
truck
right
before
we
actually
acquired
the
food
truck
tamale
festival
resumed
their
operations
last
year.

that
tamale
festival

festivity,

we

actually
also
proud
to

took
our
first
place
category
trophies,
so
that
was
very
cool.

all
the
categories
it

joy

excitement

this
validation
for
my
parents
that
have
been
cooking
this
media
forever,
and
you
know
now
implementing
this
open
concept,
tamale,
which
everybody
loves,
because
they're
quite
unusual

far
as
the
way
they're
constructed
but
they're
very
traditional
as
far
as
the
masa,
the
meat,
all
the
ingredients
that
go
on
it.
People
love
this
this
inside
out,
tamale
that
we
called
it,
and
so
hence
you
know
the
name
outside
of
the
masa.

that's
what
we
specialize
in
is
birya
tamales,
but
so
much
more
than
that,
we
also
provide.
We
do
one
thing
right,
which
is
bilia.
We
try
to
keep
it
simple,
straightforward.
We
we
definitely
take
in
consideration
the
time
that
it
takes
for
us.
You
know
to
from
getting
the
ticket
to
delivering
it.
Delivering
it
to
the
customer
is
very
important.
I
mean
I
go
to
festivals.
Where
that
you
know
for
you
to
get
a
burger,
hot
dog
or
any
dish,
it
takes
15
20,
25
minutes
it's
crazy,
so
we
stick
with
big.

to
be
in

east
side
into
coachella
palm
desert,
and
you

we
can't
wait
to
get
out
there
with
the
food
truck
and
be
selling
with
you.

the

it's

variation

We
understand
that
you

although
we

do
specialize
in
and
beef,
you

red
meat.

we've
tried
to
accommodate,

cud
or
outlet.

cavaz

outlets

yeah.
California,
people
exactly
people
do
some
well,
they
started
asking.
Do
you
guys
have
a
vegetarian
option?
Do
you
guys
have
chicken
option
because
we
don't
need
red
meat
or
we're
vegetarians?

we
definitely
accommodate
that.
So,
instead
of
adding
the
birya
insert
the
tamale,
we
actually
do
grow
veg
geez
for
the
red
meat.
So
we
do
the
chile
pasilla,
which
is
the
you
know,
mexican
bell,
pepper,
the
mexican
squash
and
the
red
onion
nicely
grilled.
You
know
we
do
everything
from
scratch
grow
down
on
the
griddle
and
you
know:
that's
that's
what
we
do
and
they
they
seem
to
love
the
veggies
on
top
of
the
tamale
or
even
for
the
quesadilla.

they
ask
hey,
you

you
have
a
vegetarian
option?

and

drives

husband

are
the
mountains

the
